    Marinated Fish Lettuce Wraps

    List of Ingredients


    • 1 lb tilapia
    • juice of 2 lemons
    • 1/4 cup olive oil
    • 2 tsp each of salt and pepper
    • 2 tsp minced garlic
    • 2 T Dijon mustard
    • 1 T red wine vinegar
    • 1 tsp red pepper flakes
    • 1 T flour
    • 2 tsp pureed adobe sauce
    • 1 cup real mayo
    • 4 oz plain yogurt
    • 1 tsp garlic powder
    • 1 T chopped cilantro
    • head of butter leaf lettuce
    • 1 bag pre-chopped coleslaw mix


    Instructions


    1. Combine the lemon juice, olive oil, 1 tsp salt and pepper each and the remaining 4 ingredients in a large Ziploc bag and marinate the fish for a good 2-4 hours.
    2. Meanwhile, mix together in a small bowl the mayo, yogurt, adobe sauce, garlic powder, and cilantro and set aside.
    3. Melt 1 T butter in a large cast-iron skillet and dredge the fish in the flour. Cook for approximately 6-8 minutes, depending on the size of the fillets or fillet. Serve in a butter leaf lettuce with a serving of the sauce and a heap of the coleslaw mix.
