    List of Ingredients


    • 1 cup Celery, diced
    • 2 tbsp Garlic, minced
    • 1/4 cup Mexene Chili Powder
    • 1/4 cup Cumin
    • 1/4 cup Basil
    • 1/4 cup Oregano
    • 1 6 oz can Tomato Paste
    • 2 15 oz cans Tomato Sauce
    • 1 15 oz can Casa Fiesta Pinto Beans
    • 1 15 oz can Casa Fiesta Chili Beans
    • 1 10 oz can Casa Fiesta Tomatoes and green chili
    • 2 cups Beef Broth
    • 2 tbsp Cajun Shake
    • 2 lb Cubed Buffalo
    • 2 lb Ground Buffalo
    • 2 cups Onion, diced


    Instructions


    1. Spray heavy pot (such as a cast iron dutch oven) with cooking spray, heat over high heat.
    2. Add the cubed buffalo and sear, stirring until no longer pink.
    3. Add the ground buffalo and brown while constantly stirring to break up ground meat, season with a little Cajun Shake about 1 1/2 tablespoons.
    4. Lower the heat to medium high.
    5. Add the onion, bell pepper and garlic and let cook for about 15 minutes.
    6. Add chili powder, cumin, oregano, and cook until fragrant, about 20 seconds.
    7. Add the tomato sauce, paste and Casa Fiesta tomatoes and green chili, simmer while stirring for 1 minute.
    8. Add 2 cups of beef broth and 2 1/2 cups of chicken stock, stir well and bring to a boil.
    9. Then add the Casa Fiesta Chili & Pinto Beans, reduce the heat and simmer partially covered, stirring occasionally, until the meat is very tender, about 3 hours.
    10. Remove from heat and season to taste.


    Final Comments


    Yield: 15 servings
