    Cardamom Gelato

    List of Ingredients


    • 4 egg yolks
    • 1 cup sugar
    • 3 cups whole milk
    • 1 1/2 tsps cardamon
    • 1 tsp cinnamon


    Instructions


    1. Whisk the egg yolks with the sugar in a bowl until thick; set aside.

    2. Over medium heat, bring the milk, cardamom and cinnamon to a simmer. Cook for 10 minutes; remove from heat and let sit for 10 minutes.

    3. Strain into a clean bowl; stir into the egg mixture. Return the whole mixture to the saucepan. Cook on low, but don't boil, until thick.

    4. Cool to room temperature. Cover and refrigerate overnight.

    5. Process in an ice-cream maker following machine directions.
