    List of Ingredients


    • 4 lbs unpeeled fresh peaches, pitted and halved
    • 1 cup water
    • dash salt
    • 1/2-1 cup honey


    Instructions


    1. Slice peaches to measure 12 cups. Put in heavy kettle with water. Bring to boil, stirring. Simmer until tender, about 5 minutes. Press through sieve. Return peach mixture to kettle, discarding skins. Bring to boil. Cook briskly about 10 minutes. Reduce heat. Simmer 20-30 minutes more, stirring often. Add salt and honey to taste.
    2. Cook, stirring, 10-20 minutes more, or until amber-colored and thick on the bottom.
    3. Fill sterlized jars to within 1/2-inch of top. Adjust lids. Process 15 minutes in boiling water bath. Tighten lids.
