    Pineapple Relish

    • 2 (1-inch-thick) slices fresh pineapple or 3 to 4 canned pineapple rings
    • 2 (1/2-inch-thick) slices red onion
    • 1/2 jalapeño pepper
    • 1/2 teaspoon olive oil
    • Juice of 1 lime
    • 2 teaspoons chopped mint or cilantro
    • Salt and pepper to taste


    Instructions


    1. On a hot grill, grill the pineapple, onion and jalapeño, about 2 minutes per side. Allow to cool to room temperature, then dice. If you'd like to make the relish less hot, remove jalapeño seeds before dicing.

    2. Combine grilled ingredients with the olive oil, lime juice, herbs, salt and pepper in a medium bowl. Stir together thoroughly.

    3. Serve at room temperature.
