    List of Ingredients


    • 2 lbs fresh zucchini squash and/or yellow squash
    • 2 small onions, sliced
    • water
    • 1/4 cup salt
    • 2 cups sugar
    • 1 tsp celery salt
    • 1 tsp tumeric
    • 2 tsps mustard seeds
    • 3 cups cider vinegar


    Instructions


    1. Either slice squash or cut into spears. Place squash and onions in large pot. Cover with water. Add salt. Let mixture stand 2 hours.
    2. Drain vegetables. Place remaining ingredients in saucepan. Bring to boil. Pour over squash and onions in large pot. Let stand 2 hours.
    3. Bring to boil. Heat 5 minutes. Pack squash and onions into sterilized jars. Pour hot brine over them. Adjust lids. Process in boiling water bath 15 minutes.
