    Beef in Red Wine with Mushrooms

    List of Ingredients


    • 2 tablespoons vegetable oil
    • 2 pounds sirloin steak, cut into 1-inch cubes
    • 1-1/4 cups red wine
    • 1 cup beef broth
    • 8 ounces fresh mushrooms, sliced
    • 1 bay leaf
    • 1 teaspoon thyme
    • 1/2 teaspoon salt
    • 1/8 teaspoon pepper


    Instructions


    1. In a large skillet, heat oil; add meat and brown on all sides. With a slotted spoon, remove meat to a bowl. Add 1/4 cup of wine to the skillet; cook, stirring to remove browned bits. Pour over meat. Add remaining wine to meat. Cover and refrigerate overnight.

    2. Preheat oven to 325°F. Spray a 3-quart casserole with non-stick vegetable spray.

    3. Place meat, beef broth, mushrooms, bay leaf, thyme, salt, and pepper in prepared casserole; cover with aluminum foil or lid.

    4. Bake for 2-1/2 hours or until meat is tender.
