    Want a stand-out entree for an upcoming holiday gathering? Prepare this delicious marinated roast and you'll be sure to impress your family and guests! It's the perfect main dish for a festive table, and since it's boneless, it's easy to slice and serve.


    List of Ingredients


    • 1/4 cup olive oil
    • 1/4 cup port wine or red wine vinegar
    • 4 tsp onion powder
    • 1 tsp dried thyme
    • 1 tsp dried marjoram
    • 1/2 tsp dried rosemary
    • 1/2 tsp salt
    • 1/4 tsp garlic powder
    • 1 boned, rolled rib roast (about 5 lbs)


    Instructions


    1. Combine olive oil, wine, onion powder, thyme, marjoram, rosemary, salt and garlic powder in a small bowl and mix well.
    2. Rub the olive-oil mixture on all sides of the beef. Wrap the beef in aluminum foil. Chill for 8 to 10 hours.
    3. Preheat the oven to 325 degrees. Roast the beef, wrapped in foil, in a roasting pan for 1 hour.
    4. Fold back the foil and roast the beef until an instant-read thermometer inserted in center of meat registers 140 degrees for medium-rare, about 1 3/4 hours longer.
    5. After removing the roast from the oven, loosely cover with foil and let it rest for 15 minutes before carving. This will ensure the meat stays juicy.
