    Chimichurri is an herb sauce served with practically everything in Argentina. Although it's oil-based, it's exremely flavorful - a little dab will do you.


    List of Ingredients


    • 1 cup parsley leaves, about 1 bunch, stemmed
    • 4 cloves garlic, roughly chopped
    • 2 shallots, roughly chopped
    • 1 small jalapeno, stemmed, seeded, and roughly chopped (optional)
    • 3 T extra-virgin olive oil
    • 2 T freshly squeezed lime juice
    • 1/2 tsp crushed red pepper flakes
    • 1/4 tsp ground cumin
    • 1/4 tsp salt
    • 1 lb flank steak


    Instructions


    1. In a food processor, combine the parsley, garlic, shallots, jalapeno (if using), olive oil, lime juice, pepper flakes, cumin, and salt. Process the mixture with on-off bursts until the contents are coarsely chopped. Scrape down the sides of the bowl with a rubber spatula. Process the mixture a few seconds more until finely chopped.
    2. Transfer it to a small bowl, cover it, and let stand for at least 30 minutes.
    3. Grill the steak over hot coals or broil it until done as desired. Slice the steak on the diagonal and serve it drizzled with the topping.
