    List of Ingredients


    • 1 1/2 cups frozen pearl onions (from a 10 oz package)
    • 1 boneless beef chuck roast (2 1/2 to 3 lbs)
    • 1 cup beef broth
    • 1/4 cup all-purpose flour
    • 1/4 cup chopped fresh parsley
    • 1 pkg (1 oz) French onion soup mix


    Instructions


    1. Preheat oven to 350 degrees. Place pearl onions in a 5-quart oval roasting pan.
    2. Place beef on top of onions. Combine beef broth, flour, parsley and soup mix in a large measuring cup or small bowl; mix well. Pour over beef in pan.
    3. Cover pan and bake until beef is fork-tender, 2 1/2 to 3 hours. Remove beef from pan. Slice crosswise into 8 portions and place on serving plates. Spoon pan juices and onions over each serving.
