    Italian Pot Roast with Red Wine Sauce

    List of Ingredients


    • 1 lb medium red potatoes (about 4), unpeeled and cut in 1" pieces
    • 1/2 lb baby carrots
    • 1 large onion, thickly sliced and separated into ringes, divided
    • 2 1/2 lbs lean boneless beef chuck roast, well-trimmed and cut into 6 pieces
    • 2 pkgs McCormick brown gravy mix
    • 1 1/2 T flour
    • 2 1/2 tsp Italian seasoning
    • 1 tsp celery salt
    • 1/2 cup water
    • 1/2 cup dry red wine
    • 1 T dried parsley flakes


    Instructions


    1. Place potatoes, carrots, half of the onion slices and beef in order listed in a 3 1/2 or 4 quart crockpot.
    2. Combine gravy mixes, flour, Italian seasoning, and celery salt in small bowl. Sprinkle half over beef. Turn beef over and sprinkle with remaining seasoning mixture.
    3. Top beef with remaining onion slcies. Combine water and wine and pour over all. Cover and cook on low for 8 hours or until beef is doen and vegetables are tender. Add parsley flakes; stir well.
    4. Remove beef and vegetables to serving platter. Spoon some sauce over beef and vegetables. Serve remaining sauce on side, if desired.
