    Recipe Introduction

This dish will make quite an impression. Not only does it have a tempting aroma, but it also looks beautiful. The green from the spinach and artichokes make a nice contrast against the color of the meat. It is ideal for a dinner party.

    List of Ingredients

    • 1 cup fresh spinach leaves
    • 1/2 (14-ounce) can quartered artichokes, chopped
    • 1 tablespoon grated Parmesan cheese
    • 1 clove garlic, minced
    • 1 tablespoon chopped fresh parsley
    • 2 tablespoons Italian-style bread crumbs
    • 1 tablespoon olive oil, divided
    • 1 1/2 pound Lean Flank Steak

    Instructions

    1. Combine spinach and next 5 ingredients in a medium bowl; stir in 1 teaspoon oil.

    2. Place the flank steak in a large baking dish. Sprinkle spinach mixture evenly over the steak to cover the top evenly. Starting at the short end, roll up steak, and tie tightly with twine to secure the steak roll.

    3. Heat remaining oil in a large nonstick skillet over medium-high heat. Brown steak on both sides about 5 minutes. Place on a baking sheet and bake at 450°F for 15 minutes or until desired degree of doneness. Remove skewers and slice evenly.

    Final Comments

    Makes 4-6 servings

Cooking Tip: Be sure to roll the steak tightly so you don't lose your filling. Remember to remove the twine before serving.
