    Chicken Pomodoro with Artichokes

    List of Ingredients


    • 4 Oz. whole wheat rigatoni pasta
    • 8 Oz boneless, skinless chicken breast, cut into 1/2 inch squares
    • 6 1/2 Oz. jar of marinated artichokes, rinsed, drained, reserving 1 Tablespoon marinade
    • 2/3 cup chopped, seeded fresh tomato
    • 2 tsp Mrs. Dash® Garlic & Herb Seasoning
    • 2 Tbsp. grated Romano cheese
    • 1 tsp olive oil


    Instructions


    1. Cook pasta according to package directions; rinse and drain.
    2. Meanwhile, saute chicken pieces in olive oil about 4 minutes or until brown.
    3. Combine artichokes, tomato, Mrs. Dash® Garlic & Herb, and reserved marinade in large skillet.
    4. Heat over medium heat, stirring constantly, 1 to 2 minutes or until heated through.
    5. Combine pasta, chicken and vegetables.
    6. Sprinkle with grated cheese.
