    Herbed Lemon Orzo

    Recipe Introduction


    Orzo is a petite pasta that looks like rice. In Italian it means "barley", no doubt because its shape reminds Italians of a grain of cooked barley. In much the same way that you would add herbs to rice for a light savory accompaniment to more powerful entrees, this orzo provides the sensual pleasure of pasta with light floral notes.


    List of Ingredients


    • 10 cups chicken broth
    • 4 cups orzo
    • 1/2 cup chopped fresh lemon thyme leaves*
    • 4 tsp grated lemon zest
    • 4 tsp peanut oil
    • 4 tsp fresh lemon juice


    Instructions


    1. Bring the broth to a boil in a large saucepan over high heat. Add the orzo, reduce the heat to medium, and cook until just tender, 9 minutes. Drain, and return the pasta to the pan.
    2. Add the remaining ingredients and toss well to combine. Serve hot.


    Final Comments


    *If lemon thyme is unavailable, substitute 1/4 cup chopped fresh regular thyme or 1/2 cup chopped fresh parsley or oregano.
