    Orecchiette with Spinach and Navy Beans

    List of Ingredients


    • ½ head of garlic, unpeeled
    • 4 TB. olive oil
    • 4 TB. butter, divided
    • 12 oz. fresh spinach leaves, chopped
    • 3 cups vegetable broth
    • 1 can navy beans, drained
    • Parmesan cheese, grated
    • 1 lb. orecchiette, cooked


    Instructions


    1. Place garlic on a baking pan, sprinkle with olive oil and bake at 325 degrees for 25 minutes. Remove from oven and slice thinly.
    2. While orrechiette is cooking, place spinach in a colander. When pasta is cooked, drain over the spinach to wilt it.
    3. Heat olive oil and 2 TB. butter in a saucepan. Add sliced garlic and sauté for 2 minutes. Add vegetable broth and simmer to reduce to about 2 cups. Add beans and remaining 2 TB. butter. Cook just long enough to heat beans.
    4. Combine sauce with pasta and spinach. Sprinkle with parmesan cheese.
