    Ricotta and Basil over Penne Marinara

    List of Ingredients


    • 1 lb penne pasta
    • 2 T olive oil
    • pinch of red pepper flakes
    • 1/2 medium clove garlic, minced
    • 2 cups marinara or other pasta sauce
    • 1/4 cup vegetable broth
    • salt and freshly ground black pepper, to taste
    • 16 oz container low-fat ricotta cheese
    • 1 T Italian parsley, chopped
    • 4 to 5 fresh basil leaves, cut into slivers


    Instructions


    1. Bring a medium saucepan of water to boil over high heat. Add the pasta and cook until tender, about 8 minutes. Drain and set aside.
    2. While pasta cooks, combine olive oil and red pepper flakes in a skillet over medium heat. Heat for 30 seconds. Add garlic and saute another 30 seconds, or until it just begins to brown.
    3. Add marinara sauce and broth and cook for 2 minutes, or until sauce begins to boil. Remove from heat and season with salt and pepper.
    4. To serve, toss the pasta in a large bowl with about half of the sauce. Divide the pasta among individual serving plates and top with additional sauce, ricotta cheese, parsley and basil.
