    This extraordinary lasagna can be served as a substantial side dish or as a meatless entree.


    List of Ingredients


    • 1 container (15 oz) ricotta cheese or cottage cheese
    • 1 pkg (10 oz) frozen chopped spinach, thawed, well drained
    • 3 cups (12 oz) shredded low-moisture part-skim mozzarella cheese, divided
    • 3/4 cup (3 oz) grated parmesan cheese, divided
    • 2 eggs, beaten
    • 1 jar (28 oz) spaghetti sauce, divided
    • 9 lasagna noodles, cooked, drained


    Instructions


    1. Heat oven to 350 degrees.
    2. Mix ricotta cheese, spinach, 2 cups of the mozzarella cheese, 1/2 cup of the Parmesan cheese and eggs.
    3. Layer 1 cup of the spaghetti sauce, 3 lasagna noodles and 1/2 of the ricotta cheese mixture in 13x9-inch baking dish. Repeat layers. Top with remaining 3 noodles, 1 cup sauce, 1 cup mozzarella and 1/4 cup Parmesan cheese.
    4. Bake 45 minutes. Let stand 10 minutes before serving.
