    Recipe Introduction


    Quartered, marinated artichoke hearts are a great pantry item for quick meals. Toss them into salads, use them as a pizza topping, or add them to pasta, as we have here.


    List of Ingredients


    • 8 oz linguine
    • 1 T olive oil
    • 1 1/2 tsps minced garlic
    • 1 (14.5 oz) can diced tomatoes, drained
    • 1 (12 oz) jar marinated quartered artichoke hearts
    • 1/4 cup water
    • 1 (4 oz) pkg crumbled herbed feta cheese


    Instructions


    1. Cook linguine according to package directions. Drain.
    2. Meanwhile, heat oil in large skillet over medium heat until hot. Add garlic; saute about 1 minute. Stir in tomatoes. Cook 5 minutes, stirring occasionally.
    3. Drain artichokes, reserving 1/4 cup of the marinade. Add artichokes to tomato mixture; cook 2 minutes. Stir in water and reserved marinade. Reduce heat to low; cover and simmer an additional 5 minutes or until mixture is hot and bubbly.
    4. Place linguine in large shallow bowl. Add tomato-artichoke mixture; toss to combine. Sprinkle with cheese. Serve immediately.
