    Tomato Sauce w/ Ricotta & Herbs

    List of Ingredients


    • 8 cups chopped onions
    • 2 T minced garlic
    • 6 T olive oil
    • 9 qts tomatoes, peeled, seeded and diced
    • 6 T chopped fresh marjoram
    • 4 tsp chopped fresh rosemary
    • 1 T salt
    • 1 T sugar
    • 2 tsp black pepper
    • 3 lbs cooked fettuccine
    • 1 1/2 cups ricotta cheese


    Instructions


    1. Saute onions and garlic in oil in a large skillet over medium high heat until softened.
    2. Stir in remaining ingredients except ricotta and fettuccine. Cook over medium high heat stirring frequently for 10-15 minutes, or until sauce thickens.
    3. Top each serving with 1 oz (1 T) ricotta cheese.
