    List of Ingredients


    • 2 1/2 qts chopped red bell peppers
    • 5 cups thinly sliced green onions
    • 3 T minced garlic
    • 1/3 cup olive oil
    • 8 qts tomatoes, seeded and diced
    • 1 2/3 cups grated parmesan cheese
    • 1/4 cup black pepper
    • 2 1/2 tsp cayenne pepper
    • 3 lbs cooked penne pasta


    Instructions


    1. Saute peppers, onions and garlic in oil in a large skillet over medium high heat until vegetables are tender-crisp. Stir in tomatoes; cook over high heat until sauce thickens, 10-15 minutes.
    2. Stir in remaining ingredients except pasta. Serve.
