    Pumpkin Bars


    List of Ingredients


    • 1 (3 1/2 oz) can flaked coconut
    • 1 cup graham cracker crumbs
    • 1 cup chopped walnuts
    • 1/4 cup butter, melted
    • 2 cups pumpkin
    • 1 (14 oz) can sweetened condensed milk
    • 2 eggs
    • 2 T pumpkin pie spice
    • 1/2 tsp salt


    Instructions


    1. Combine coconut, graham cracker crumbs, walnut, and melted butter in large mixing bowl; mix well. Press two thirds of mixture into an ungreased 13" x9" x2" baking pan.
    2. Combine pumpkin, milk, eggs, spice and salt. Spoon over coconut mixture; sprinkle remaining coconut mixture over top.
    3. Bake at 375 degrees for 30 to 35 minutes.
    4. Cool in pan; chill thoroughly. Cut into 3" x 2" bars.
