    Recipe Introduction


    Serve with pasta & broccolini (see pasta).


    List of Ingredients


    • 2 T flour
    • 1/4 tsp each salt and pepper
    • four 5-oz skinless, boneless chicken breast halves
    • 2 tsp olive
    • basil pesto


    Instructions


    1. Mix flour, salt, and pepper in a large ziptop bag. Add chicken breast halves, seal and shake to coat.
    2. Heat olive oil in a large nonstick skillet over medium heat. Add chicken; cook 6 to 8 mintues, turning once, until cooked through. Serve topped with basil pesto.


    Final Comments


    Serves 4.
