    Citrus Chicken with Oregano and Cumin

    List of Ingredients


    • 4 boneless, skinless chicken breast halves, pounded to an even thickness
    • 1 T. dried oregano
    • 1 t. ground cumin
    • 2 garlic cloves, minced
    • zest and juice of 1 lime
    • zest and juice of 1 orange
    • 1 t. kosher salt
    • 1/2 t. black pepper
    • 1 T. vegetable or olive oil


    Instructions


    1. Place the chicken, oregano, cumin, garlic, and zest and juice of the lime and orange in a large nonreactive shallow bowl and stir to combine.
    2. Cover and place in the refrigerator for at least 1/2 hour and not more than 1 hour.
    3. Remove the chicken and discard the marinade. Sprinkle the chicken with the salt and pepper.

    4. Grill over medium heat, 5 -7 minutes per side. Cook until well browned and cooked throughout
    5. Transfer the chicken to a platter and serve immediately.
