    • 2 T safflower oil
    • 2 limes
    • 2 tsp crushed red pepper flakes
    • 1/2 tsp garlic powder
    • 1/2 tsp jalapeno pepper, minced
    • 2 tsp cilantro, chopped
    • 2 tsp fresh basil, chopped
    • 1 tsp spicy brown mustard
    • 1chicken breast, halved and skinned
    • salt and black pepper to taste


    Instructions


    1. Squeeze all the juice from the limes and place in a bowl. Add the oil and mix. Next add the garlic powder, jalapeno pepper, red pepper flakes, cilantro, basil, salt, black pepper, and brown mustard. Stir until blended. Set aside.
    2. Wash the breasts under cold water and pat dry. Place the chicken in a baking dish and pour marinade over the breasts. Marinate in the refrigerator for at least 4 hours or over night. Turn breasts while marinating.
    3. Grill 6" above hot coals, turning frequently, or bake in a preheated 375 degree oven. Cook for 35-45 minutes or until the juices run clear, basting frequently.
