    • 4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
    • 2 Tbsp. Bertolli® Olive Oil
    • 1 lb. red potatoes, sliced (such as zucchini, yellow squash, red and/or green bell peppers)
    • 1/2 tsp. dried rosemary, crushed
    • 1 package Knorr® Leek recipe mix
    • 1-1/2 cups water
    • 2 Tbsp. dry white wine or water


    Instructions


    1. Pour yourself a glass of wine, then season the chicken with a little salt and pepper.

    2. Heat olive oil in a large skillet over medium-high heat and cook chicken, turning once, until thoroughly cooked, about 8 minutes. Remove and set aside.

    3. Stir in vegetables and rosemary and cook, stirring occasionally, until vegetables are crisp-tender, about 4 minutes. Stir in Knorr® Leek recipe mix, water and wine and bring to a boil. Reduce heat and simmer, stirring occasionally, until vegetables are tender, about 2 minutes. Return chicken to skillet and simmer until heated through. Enjoy your beautiful creation!
