    Have plans this Labor Day? If not, this speedy chicken recipe is a great meal idea for an impromptu barbecue with family and friends--it's ready to eat in under 30 minutes! Add a no-cook appetizer and dessert, throw some potatoes on the grill with the chicken, and you have the makings of a stress-free, unofficial end-of-summer celebration.


    List of Ingredients


    • 2 teaspoons paprika
    • 1 teaspoon hot Mexican-style chili powder
    • 1 teaspoon seasoned salt
    • 1/2 teaspoon brown sugar
    • 1/4 teaspoon garlic powder
    • 1/8 teaspoon cayenne pepper
    • 1 tablespoon vegetable oil
    • 4 boneless, skinless chicken-breast halves (about 5 ounces each)


    Instructions


    1. Preheat grill to medium. Place grill rack 6 inches from heat.
    2. Combine paprika, chili powder, seasoned salt, brown sugar, garlic powder and cayenne pepper in a bowl and mix well.
    3. Add vegetable oil to paprika mixture and stir to form a paste. Rub mixture evenly over chicken. Arrange on grill rack; cover.
    4. Grill, turning once, until an instant-read thermometer inserted in center of meat registers 180F, about 8 to 10 minutes.



    Final Comments


    Serves 4

    *When the weather isn't right for grilling, broil the chicken instead. Broil 4 inches from heat for 5 minutes; turn and broil another 5 minutes. Turn the broiler to low and cook, turning once, until a meat thermometer inserted in the chicken reads 180F.

    *If Mexican-style chili powder isn't available, an extra teaspoon of paprika and a pinch of ground cumin will do the job.
