    Herbed Roast Turkey Breast

    List of Ingredients


    • 1 teaspoon salt
    • 1 medium onion, peeled and quartered
    • 2 carrots, peeled and quartered
    • 2 celery stalks, cut into chunks
    • 4 sprigs parsley
    • 6 tablespoons fresh chopped sage
    • 1 whole bay leaf
    • 2 tablespoons fresh chopped thyme
    • 2 tablespoons butter, melted
    • 1/4 teaspoons black pepper
    • 1 -5.5 lb bone in turkey breast, cleaned and patted dry


    Instructions


    1. Preheat oven to 325 degrees.
    2. Sprinkle turkey breast with 1/2-teaspoon salt. In a roasting pan, mound carrots, onion, celery, parsley, and bay leaf in the center. Gently loosen the skin from the breast; sprinkle underneath the skin with 1/2 the sage and thyme. Rearrange the skin over breast and place turkey skin side up on the mound of vegetables. Brush turkey with 2 tablespoons of butter and then sprinkle with remaining sage, thyme, 1/2 teaspoon salt and 1/4 teaspoon pepper.
    3. Roast turkey uncovered until meat thermometer reaches 180 degrees. This should take about 2.5 hours.
