    List of Ingredients


    • 1 chicken breast, halved, skinned and boned
    • 1/2 cup flavored bread crumbs
    • 1 egg
    • 4 oz lowfat mozzarella cheese
    • 1/2 cup Italian tomato suace
    • olive oil
    • grated parmesan cheese


    Instructions


    1. In a bowl, beat the egg. Place the bread crumbs on a plate. Dip the chicken breast in the egg then in the bread crumbs. Coat each breast evenly with the crumbs. Press firmly to adhere the bread crumbs to the breasts.
    2. In a large saute pan, add enough olive oil to coat the bottom of the pan. Heat the oil until hot. Add the chicken and brown on both sides until golden. Add more oil if necessary.
    3. Coat the bottom of a large baking dish with a thin layer of tomato sauce. Lay the chicken flat in the baking dish. Spoon the tomato sauce over the chicken. Coarsely shred the mozzarella cheese and sprinkle on the chicken breast.
    4. Bake in a preheated 350 degree oven for 30 minutes or until the juices run clear. Serve and garnish with the grated Parmesan cheese.
