    • 1/2 cup white vinegar
    • zest and juice of 4 limes
    • 1/4 cup canola oil
    • 5 scallions, trimmed and coarsely chopped
    • 3 cloves garlic, coarsely chopped
    • 2" piece ginger, coarsely chopped
    • 2 Scotch bonnet peppers, seeded and chopped, or to taste
    • 2 T ground allspice
    • 2 T ground thyme
    • 1 T ground cinnamon
    • 1 T sugar
    • 1 tsp ground black pepper
    • 1 tsp salt
    • 1 tsp cayenne pepper
    • 3 lbs chicken, cut into 8 pieces


    Instructions


    1. In a food processor, combine vinegar, lime zest, lime juice, canola oil, scallions, garlic, Scotch bonnet pepper, ginger, allspice, thyme, cinnamon, sugar, black pepper, salt, and cayenne pepper. Puree until smooth.
    2. Place chicken pieces in a medium bowl. Pour marinade over chicken, and turn the pieces to coat. Cover, and refrigerate for at least 1 hour or ovenight if possible.
    3. Preheat the oven to 350 degrees. Place the chicken pieces on a foil-lined baking sheet and cook until the juices run clear when pierced with a two-pronged fork, about 45 minutes.
