    Lemon-Herb Chicken


    List of Ingredients


    • 1 (2 1/2 lb) chicken, cut up
    • 2 T fresh lemon juice
    • 1 1/2 tsp grated lemon rind
    • 1/2 tsp salt
    • 1/2 tsp cracked pepper
    • 4 sprigs fresh rosemary, sage, or thyme
    • Hot cooked wild rice


    Instructions


    1. Arrange chicken in a lightly greased 13" x 9" baking dish. Drizzle with lemon juice, and sprinkle with lemon rind, salt, and pepper. Place fresh herbs over chicken.
    2. Bake, covered, at 375 degrees for 1 hour. Uncover and bake 15 more minutes. Serve with wild rice.
