    Lemon Garlic Chicken Thighs


    List of Ingredients


    • 8 chicken thighs
    • juice of 1 lemon
    • 1 clove garlic, crushed
    • 1/2 tsp thyme
    • white pepper
    • 10 cherry tomatoes
    • 2 T butter


    Instructions


    1. Wash and pat chicken dry.
    2. In bowl, toss thighs with lemon juice, crushed garlic and thyme. Make sure all sides are coated.
    3. Refrigerate chicken for 2 hours or more. Turn chicken at least once.
    4. Place thighs on a rack in baking pan, skin side up. Sprinkle with salt and pepper.
    5. Bake at 425 degrees for about 30 minutes.
    6. Halve tomatoes. Melt butter in skillet. Add tomatoes. Cook 1 to 2 minutes to heat through.
    7. Put chicken on platter; spoon tomatoes over and serve.
