    Molasses-Mustard Turkey Breast

    • nonstick olive oil spray
    • 1 boneless turkey breast half (about 4 lbs)
    • coarse salt
    • coarsely ground black pepper
    • 1 lb new potatoes, scrubbed
    • 4 oz baby carrots
    • 8 peeled cloves garlic, jarred or fresh
    • 1/4 cup molasses
    • 3 T spicy brown mustard


    Instructions


    1. Preheat the oven to 425 degrees. Coat a baking dish with olive-oil spray.
    2. Season turkey with salt and pepper to taste. Scatter potatoes, carrots and garlic in the baking dish; top with the turkey breast. Coat vegetables and turkey with more olive-oil spray. Roast for 30 minutes.
    3. Stir together molasses and mustard. Lower the oven temperature to 375 degrees. Brush the turkey with half of the molasses-mustard mixture. Bake for 10 minutes, brush with the remaining molasses-mustard mixture, and bake for another 10 minutes, until the internal temperature of the turkey registers 160 degrees. Slice the turkey and serve.
