    Smothered Chicken with Mushrooms

    • 1 (3 lb) frying chicken, cut into 8 pieces
    • salt and black pepper, to taste
    • 1/4 cup olive oil
    • 1 1/2 cups chopped onion
    • 1/4 cup flour
    • 2 cups chicken broth
    • 1 lb fresh mushrooms, wiped clean and sliced
    • 1/4 cup chopped fresh parsley


    Instructions


    1. Preheat oven to 400 degrees.
    2. Season chicken to taste with salt and pepper. In a large heavy-bottomed skillet, heat oil over high heat and brown chicken pieces, turning when necessary. Adjust heat so chicken browns quickly but does not burn. Transfer chicken to a shallow casserole large enough to hold pieces in one layer.
    3. Add onions to skillet and cook, stirring frequently, for about 5 minutes, or until they are soft and lightly colored. Stir in flour and mix it in well with a spoon. Pour in chicken broth and, stirring constantly, bring to a boil. Reduce heat and let broth simmer for 2-3 minutes.
    4. Pour sauce over chicken in casserole, cover tightly and cook in oven for about 20 minutes. Scatter mushrooms over chicken, recover and bake another 10 minutes, or until chicken is tender. Sprinkle parsley over top and serve.
