    List of Ingredients


    • 2 T butter
    • 4 1/2 cups thinly sliced carrots (about 1 1/2 lbs)
    • 2 T minced green onion
    • 2 T all-purpose flour
    • 1 T chopped fresh parsley
    • 1/4 tsp salt
    • 1/4 tsp ground black pepper
    • 1 cup milk
    • 1 cup shredded Colby-Monterey Jack cheese blend
    • 1 cup crushed potato chips


    Instructions


    1. Preheat oven to 350. Lightly grease a 9-inch baking dish.
    2. In a large skillet, melt butter over medium heat. Add carrots and green onion; cook 6 minutes, stirring occasionally.
    3. Stir in flour, parsley, salt, and pepper; cook 2 minutes, stirring occasionally. Add milk, cook 2 to 3 minutes, or until thickened. Stir in cheese.
    4. Spoon mixture into prepared baking dish; top with chips. Bake 30 minutes, or until hot and bubbly.
