    Caramelized Onion and Steak Sandwiches

    Source of Recipe

    Paula Deen Magazine, March/April 2007

    List of Ingredients

    • 3 T butter
    • 4 large sweet onions, thinly sliced
    • 1 (1 1/2 lb) cooked flank steak (leftover from Grilled Flank Steaks)
    • 2 T soy sauce
    • 1/2 tsp ground black pepper
    • 1/4 tsp salt
    • 6 hoagie rolls, split, buttered, and toasted
    • 3 cups shredded Monterey Jack cheese with horseradish (Swiss cheese can be substituted)
    • Chopped fresh parsley (optional)

    Instructions

    1. In a large skillet, melt butter over medium heat. Add onions, cover, and cook, 30 minutes, stirring occasionally. Uncover, increase heat to medium-high, and cook 5 to 6 minutes, stirring frequently, or until onions are caramelized. Thinly slice steak diagonally against the grain. Add steak, soy sauce, pepper, and salt, stirring to combine. Cook 3 to 4 minutes, or until heated through.
    2. Divide onion mixture evenly between hoagie rolls. Top each with 1/2 cup cheese. Broil sandwiches 5 1/2-inches from heat until cheese is melted. Garnish with chopped fresh parsley, if desired.
