    List of Ingredients


    • 3 baking potatoes
    • 4 T olive oil, divided
    • 1/2 tsp salt
    • 1/4 tsp ground black pepper


    Instructions


    1. Preheat oven to 450. Cut potatoes in half lengthwise. Cut each half into thin wedges.
    2. Drizzle a large rimmed baking sheet with 2 T olive oil. Arrange potatoes in a single layer on baking sheet. Drizzle potatoes with remaining 2 T olive oil. Sprinkle with salt and pepper.
    3. Cook potatoes 30 to 40 minutes, or until crispy.
