    List of Ingredients


    • 3 cups (24 oz) chicken broth or water
    • 3/4 tsp salt
    • 4 whole cardamon pods
    • 2 whole cloves
    • 1 cinnamon stick
    • 1 1/2 cups uncooked long-grain rice
    • 1/2 cup thinly sliced dried apricots
    • 1/2 cup thinly sliced dried figs
    • 1/4 cup chopped parsley


    Instructions


    1. In a medium saucepan, bring broth or water and salt to a boil over high heat. Stir in cardamon, cloves, cinnamon, and rice and reduce heat to low. Cover and simmer until rice is tender and water is absorbed, about 20 minutes.
    2. Remove spices, fluff rice with a fork, and stir in apricots, figs, and parsley. Serve with African Chicken in Peanut Sauce.
