    Vegetable Dirty Rice

    List of Ingredients


    • 1 1/2 cups enriched white rice
    • 2 T vegetable oil
    • 1 white onion, finely chopped
    • 1 green bell pepper, cored, seeded and diced
    • 1 red bell pepper, cored, seeded and diced
    • 1 heaping T minced garlic
    • 1 T chopped jalapeno chile (about 1 large)
    • 1/4 cup Worcestershire sauce
    • 2 bay leaves
    • 1 T chopped thyme
    • 2 tsp freshly ground black pepper
    • 1 tsp coarse salt
    • 1/2 tsp paprika
    • pinch cayenne pepper
    • 1/2 cup chopped green onions


    Instructions


    1. Put rice in a large bowl and cover with water. Stir the rice and drain. Repeat this process 5 to 6 times until water runs clear. Put rice in a pot, and cover with enough water to measure 1" over surface of rice. Bring to a boil, then reduce to a simmer; cook, partially covered, for about 20 minutes; do not overcook. Remove from heat and fluff with a fork.
    2. In a a large skillet over medium-high heat, add vegetable oil and cook onion, bell peppers, garlic and jalapeno. Cook until vegetables are soft, about 10 minutes. Add Worcestershire sauce and cooked rice. Stir until rice is coated with sauce; add seasonings and green onions, and cook, partially covered, over low heat another 15 minutes. Adjust seasonings if necessary.


    Final Comments


    Yield: 6 to 8 servings
