List of Ingredients
- 8 cups torn lettuce leaves
- 1/2 cup peeled, thinly sliced cucumber
- 1/4 cup sliced green onions, white and green parts
- 1/4 cup finely chopped mint leaves
- 1/4 cup finely chopped parsley
- 1/4 cup vegetable oil
- 1/4 cup lemon juice, freshly squeezed and strained
- salt, to taste
- freshly ground black pepper, to taste
Instructions
- In a large salad bowl, combine the lettuce, cucumber, green onions, mint and parsley.
- In a cup beat the oil and the lemon juice until thoroughly blended. Season with salt and pepper.
- Pour over the salad and toss.
Final Comments
Yield: 6 to 8 servings.
