    List of Ingredients


    • 8 cups torn lettuce leaves
    • 1/2 cup peeled, thinly sliced cucumber
    • 1/4 cup sliced green onions, white and green parts
    • 1/4 cup finely chopped mint leaves
    • 1/4 cup finely chopped parsley
    • 1/4 cup vegetable oil
    • 1/4 cup lemon juice, freshly squeezed and strained
    • salt, to taste
    • freshly ground black pepper, to taste


    Instructions


    1. In a large salad bowl, combine the lettuce, cucumber, green onions, mint and parsley.
    2. In a cup beat the oil and the lemon juice until thoroughly blended. Season with salt and pepper.
    3. Pour over the salad and toss.


    Final Comments


    Yield: 6 to 8 servings.
