    Bacon-Ranch Potato Salad

    • 2 pounds red potatoes, quartered
    • Oil
    • Salt to taste
    • Pepper to taste
    • 1 cup chopped, cooked smoked bacon
    • 1 cup diced red onion
    • 1/4 cup freshly chopped parsley
    • 1 cup ranch dressing


    Instructions


    1. Preheat oven to 350 degrees.
    2. In a large bowl, lightly coat potatoes with oil. Season with salt and pepper. Spread evenly on a large sheet pan. Bake for 25 to 35 minutes until tender; cool.
    3. Combine bacon, onion, parsley and ranch dressing; toss with potatoes. Season with additional salt and pepper. Keep refrigerated.
