    Black Bean, Feta and Couscous Salad

    List of Ingredients


    • 10 oz. couscous, uncooked
    • 1 3/4 C. black beans, rinsed and drained
    • 1/3 C. minced red onion
    • 1/4 C. chopped fresh mint
    • 1/3 C. lemon juice
    • 1/4 C. olive oil
    • 1/4 tsp. salt
    • 1/4 tsp. black pepper
    • 3/4 C. (3 oz.) crumbled feta cheese


    Instructions


    1. Prepare couscous according to pkg. directions.
    2. In a large bowl, combine beans, onion, mint, lemon juice, olive oil, salt and pepper. Fluff couscous with fork; combine couscous with bean mixture. Gently fold in cheese.
    3. Refrigerate at least 30 minutes. Garnish with additional cheese and fresh mint, if desired.
