    Black Bean and Rice Salad

    List of Ingredients


    • 1 can (14 1/2 oz) chicken broth
    • 1/4 cup water
    • 1 cup long grain rice
    • 1 can (15 oz) black beans, drained and rinsed
    • 1 red bell pepper, chopped
    • 1/2 green bell pepper, chopped
    • 1/2 medium red onion, chopped
    • Dressing:
    • 3 T olive oil
    • 3 T orange juice
    • 1 T red wine vinegar
    • 2 tsp dried cilantro leaves
    • 1 1/2 tsp ground cumin
    • 1 tsp McCormick California style garlic salt
    • 1/2 tsp chili powder


    Instructions


    1. Heat chicken broth and water to boil in 2 quart saucepan. Add rice, cover, reduce heat, and simmer 20 minutes.
    2. Place rice, beans, red and green bell peppers, and onion in large salad bowl and stir gently to combine.
    3. Place dressing ingredients in small bowl and mix well. Pour dressing over rice mixture and stir gently. Refrigearte at least 4 hours.


    Final Comments


    Makes 8 servings.
