Black Bean and Rice Salad

List of Ingredients
- 1 can (14 1/2 oz) chicken broth
- 1/4 cup water
- 1 cup long grain rice
- 1 can (15 oz) black beans, drained and rinsed
- 1 red bell pepper, chopped
- 1/2 green bell pepper, chopped
- 1/2 medium red onion, chopped
- Dressing:
- 3 T olive oil
- 3 T orange juice
- 1 T red wine vinegar
- 2 tsp dried cilantro leaves
- 1 1/2 tsp ground cumin
- 1 tsp McCormick California style garlic salt
- 1/2 tsp chili powder
Instructions
- Heat chicken broth and water to boil in 2 quart saucepan. Add rice, cover, reduce heat, and simmer 20 minutes.
- Place rice, beans, red and green bell peppers, and onion in large salad bowl and stir gently to combine.
- Place dressing ingredients in small bowl and mix well. Pour dressing over rice mixture and stir gently. Refrigearte at least 4 hours.

Makes 8 servings.
