    Broccoli-Cauliflower Salad


    List of Ingredients


    • 1 cucumber, peeled
    • 1 cup mayonnaise
    • 2 T white wine vinegar
    • 1 garlic clove, pressed
    • 1 T sugar
    • 1 tsp salt
    • 1 lb cauliflower, coarsely chopped
    • 1 lb broccoli, coarsely chopped
    • 4 green onions, sliced


    Instructions


    1. Cut cucumber in half lengthwise, and thinly slice.
    2. Whisk together mayonnaise, white wine vinegar, and next 3 ingredients in a large bowl; add cucumber, cauliflower, broccoli, and green onions, tossing well. Cover and chill at least 4 hours.


    Final Comments


    Yield: 6 servings.

    TIP: Broccoli-Cauliflower Salad can be prepared a day ahead.
