Caesar Salad

List of Ingredients
- Dressing:
- 1 egg
- 3/4 C. salad oil
- 1/4 C. fresh lemon juice
- 1 t. salt
- 1/2 t. black pepper
- 1 t. Worcestershire Sauce
- 1/4 C. grated Parmesan cheese
- Salad:
- 2 heads of cleaned Romaine lettuce torn into bite size pieces
- 2 C. croutons
Instructions
- Submerge egg in boiling water for 1 minute. Break into a bowl and whip until fluffy. Continue whisking and slowly add the oil. Dressing should be thick. Add the rest of the ingredients and whisk again.
- To make the croutons: Cut a loaf of good French bread into thick slices. Remove crusts. Cut into 1/2 inch cubes. 1/4 C. butter; 2 garlic cloves, minced fine; Heat some of the butter and add garlic to a frying pan. Add bread cubes and slowly fry until they are golden brown. Add butter as necessary.
- To assemble: Place greens in a large bowl. Add croutons and dressing. Toss. Place on individual plates and serve.
