    List of Ingredients


    • Dressing:
    • 1 egg
    • 3/4 C. salad oil
    • 1/4 C. fresh lemon juice
    • 1 t. salt
    • 1/2 t. black pepper
    • 1 t. Worcestershire Sauce
    • 1/4 C. grated Parmesan cheese
    • Salad:
    • 2 heads of cleaned Romaine lettuce torn into bite size pieces
    • 2 C. croutons


    Instructions


    1. Submerge egg in boiling water for 1 minute. Break into a bowl and whip until fluffy. Continue whisking and slowly add the oil. Dressing should be thick. Add the rest of the ingredients and whisk again.

    2. To make the croutons: Cut a loaf of good French bread into thick slices. Remove crusts. Cut into 1/2 inch cubes. 1/4 C. butter; 2 garlic cloves, minced fine; Heat some of the butter and add garlic to a frying pan. Add bread cubes and slowly fry until they are golden brown. Add butter as necessary.



    3. To assemble: Place greens in a large bowl. Add croutons and dressing. Toss. Place on individual plates and serve.



    Final Comments


    Serves 8

    Serve for New Year's with french onion soup; medallions of beef with peppercorns and mustard; garlic mashed potatoes; roasted carrots; greek new year sweet bread; easy creme de menthe cake
