    A Large rotisserie chicken from your supermarket makes a great shortcut for this recipe.


    List of Ingredients


    • 3 cups chopped cooked chicken (about 4 skinned and boned chicken breast halves)
    • 1/2 cup minced green onions
    • 2 celery ribs, chopped
    • 1/2 cup chopped pecans, toasted
    • 2/3 cup light mayonnaise
    • 2 to 3 T prepared horseradish
    • 2 tsp fresh lemon juice
    • 1/2 tsp grated lemon rind
    • 1/4 tsp salt
    • 1/2 tsp pepper


    Instructions


    1. Stir together all ingredients in a large bowl. Cover and chill at least 2 hours before serving.


    Final Comments


    Makes 5 (1-cup) servings.
