Chicken Parmesan Couscous Salad

List of Ingredients
- 1 pkg (5.9 oz) Parmesan couscous mix*
- 1 can (10 oz) chunk chicken breast, drained**
- 1 jar (7 oz) roasted red bell peppers, drained and cut into strips
- 1 jar (6 to 7 oz) marinated artichoke hearts, undrained
- 1/4 cup chopped fresh parsley
Instructions
- Make couscous as directed on package. Transfer couscous to large bowl; let stand 20 minutes to cool slightly.
- Add remaining ingredients to couscous; gently stir to mix. Serve slightly warm or at room temperature.
Final Comments

*If flavored couscous is not available, cook regular couscous as directed on the package, using chicken broth and stirring in 1/4 cup grated Parmesan cheese at the end.
**Substitute 1 1/2 cups cut-up cooked chicken for the canned chicken.
