Greek Chickpea Salad

List of Ingredients
- 2 (15 1/2 oz) cans garbanzo beans (chickpeas)
- 1 small red onion, peeled and finely chopped
- 8 oz crumbled feta cheese
- 1/2 English cucumber, peeled and finely diced
- 1 small rib celery, finely chopped
- 2 cloves garlic, minced
- 4 T chopped fresh chives
- 2 T chopped fresh oregano
- zest and juice of 1 large lemon
- 1/4 cup extra-virgin olive oil
- salt and pepper to taste
Instructions
- Drain garbanzo beans and place in a medium bowl.
- Toss in onion, feta cheese, cucumber, garlic, chives, oregano, lemon zest and juice, olive oil, salt and pepper; combine.
