    List of Ingredients


    • 2 (15 1/2 oz) cans garbanzo beans (chickpeas)
    • 1 small red onion, peeled and finely chopped
    • 8 oz crumbled feta cheese
    • 1/2 English cucumber, peeled and finely diced
    • 1 small rib celery, finely chopped
    • 2 cloves garlic, minced
    • 4 T chopped fresh chives
    • 2 T chopped fresh oregano
    • zest and juice of 1 large lemon
    • 1/4 cup extra-virgin olive oil
    • salt and pepper to taste


    Instructions


    1. Drain garbanzo beans and place in a medium bowl.
    2. Toss in onion, feta cheese, cucumber, garlic, chives, oregano, lemon zest and juice, olive oil, salt and pepper; combine.
