    Green Bean-and-Sesame Salad

    List of Ingredients


    • 2 teaspoons salt (divided use)
    • 2 pounds young green beans, stemmed
    • 1/4 cup olive oil
    • 1/4 cup sesame seeds, toasted
    • 2 tablespoons freshly squeezed lemon juice
    • 2 cloves garlic, peeled and minced
    • 1 teaspoon freshly ground black pepper
    • 1 teaspoon freshly ground black pepper


    Instructions


    1. Bring a large pot of water and 1 teaspoon of salt to a rapid boil over high heat. Place beans in water and cook for 3 to 5 minutes, or until beans are tender. Do not overcook.

    2. Drain beans in a large colander. Plunge beans in a bowl of ice water for 2 to 3 minutes to stop cooking and retain color. Drain thoroughly.

    3. Combine oil, sesame seeds, lemon juice, garlic, black pepper, red-pepper flakes and the remaining 1 teaspoon salt in a large bowl. Add green
      beans and toss gently to combine. Serve at room temperature.
