    Grilled Caesar Ranch Salad

    List of Ingredients


    • 1 cup bottled ranch dressing
    • 1/4 cup shredded Parmesan cheese
    • 2 T lemon juice
    • 2 tsp Dijon mustard
    • 1/2 tsp jarred crushed garlic
    • salt and pepper, to taste
    • 3 count package romaine lettuce hearts
    • 2 T olive oil
    • croutons, for garnish (optional)


    Instructions


    1. Set up grill for direct cooking over medium-high heat. Oil grate when you're ready to start cooking.
    2. In small bowl, combine ranch dressing, Parmesan, lemon juice, mustard and garlic, and season with salt and pepper.
    3. Cut romaine hearts lengthwise in half, keeping core intact. Drizzle cut sides with olive oil and season with salt and pepper. Lay romaine hearts, cut sides down, on the hot, oiled grill. Grill 1 to 2 minutes, or until grill marks form and lettuce just begins to wilt.
    4. Transfer to plates; drizzle with dressing. Garnish with croutons and additional cheese, if you like.
