    List of Ingredients


    • 1 garlic clove
    • 1/4 cup plus 3 T olive oil
    • 1 T red wine vinegar
    • 1 T fresh lemon juice
    • 1 tsp Dijon mustard
    • 1/2 tsp salt, divided
    • 4 slices (3/4" thick) Italian bread
    • 1 1/4 lb boneless, skinless chicken breast halves
    • 1 head romaine lettuce, torn into bite-size pieces (16 cups)
    • 1/2 cup shredded Parmesan cheese


    Instructions


    1. Lightly crush garlic, combine in a cup with 1/4 cup olive oil and let stand for 5 minutes.
    2. Pour garlic oil in a large salad bowl. Add red wine vinegar, lemon juice, mustard and 1/4 tsp each salt and pepper. Reserve.
    3. Lightly brush one side of each bread slice with some of the remaining olive oil.
    4. Heat a grill pan over medium heat. Brush chicken with remaining oil, season lightly with 1/4 tsp each salt and pepper, add to pan and cook until golden brown and cooked through, for about 10 minutes, turning once. Transfer chicken to a board and let stand. Meanwhile, toast bread. Arrange toast on 4 plates.
    5. Whisk dressing mixture again, add lettuce and some of Parmesan cheese and toss well. Serve salad on plates with toast. Thinly slice chicken and arrange on salads. Top with more cheese.


    Final Comments


    Serves: 4

    *Make croutons: saute 1 cup 1/4" cubes of white bread with 1 clove finely chopped garlic in 3 T olive oil until lightly browned.
